Low-Sugar Apple Jam

Greetings,
This is not a period recipe. But I wanted to share it somehow. Especially since with the pandemic many are eating a lot of pb and jam/jelly. It also being lent.
My family has a few diabetic/pre-diabetic members and I myself just do not like jams In the stores due to high amounts of sugar. So I seek out not only low sugar jam recipes, but unique ones.
This summer I took my father fruit picking for the first time in his 80 years. He had fun picking peaches so I went back again picking apples. With the abundance of apples, I search hard for a low sugar apple Jam (not butter) recipe. This recipe used raisins but next time I will use the little Greek currants.
Also, I used the apples I picked, but I am sure u can choose another.
8 cups ginger gold apples peeled, cored and chopped small. (My first batch I left them semi large thinking they would break down in the cook but they didn’t. So about 1cm sized is good for spreading. )
1 cup apple cider. (I used cider as it is more pure and stronger than juice.)
8 tbs lemon juice. (For ph value)
3/4 cup currants (or raisins)
Heat in pot
Mix together:
1/4cup sugar
1 1/2 tsp cinnamon
1/2 tsp cardamom
1/2 tsp allspice
1/8 tsp clove
1 pack low sugar pectin
These where the spices I had at home at the time. Other spices like ginger could be added. I just didn’t have any π mix and match.
Add spices to apples and bring to a boil.
At boil add 1 cup packed brown sugar and 3/4 cup white sugar. Add at boil and cook 1 minute then ladle into hot jars leaving 1/4″ headspace. Cover and process ad with normal jam making.
I know there ARE period jams of a sort. But many call for a lot of sugar. Something many of us can’t have so I just wanted to share this some place. If it isnβt period enough to post that is fine. π
